Wedding Cookies Recipe

1 cup unsalted butter at room temperature
1/2 cup powdered sugar
1 tsp. vanilla
1 3/4 cup all-purpose flour
1 cup chopped walnuts
1 tsp. cardamom
1 cup powdered sugar (for dusting)
Method: Preheat oven to 350 and line cookie sheets with foil. Using an electric mixer, cream the butter and sugar in a bowl at low speed until it is smooth and beat in the vanilla. At low speed gradually add the flour and mix in the walnuts with a spatula. With floured hands, take out about 1 tablespoon of dough and shape into a crescent or 1.5” ball. Continue to dust hands with flour as you make more cookies and place onto prepared cookie sheets. Bake until firm and very pale golden, about 15-20 minutes. Put cardamom into a bowl and add (1) cup powdered sugar and mix with fork. When cookies are cool enough to handle but still warm, roll each cookie in the cardamom and sugar mixture. To achieve a solid coating, roll each cookie in the mixture a second time. Allow cookies to cool on wire racks and then enjoy.
